It's fitted to my MY21 car (a Sportline 2.0TSI DSG 4x4) and the button selects the Off-Road mode. This provides better traction on rough terrain, and helps when descending hills. A special display is activated in the Infotainment screen to show three of five items: Steering Angle, Coolant Temperature, Oil Temperature, Compass Bearing or Altimeter.

Does your newer car have it on the Drive Mode screen instead? Or has it been deleted from the spec?

Further investigations show that the October 2022 Karoq brochure states "All-wheel drive versions also offer an optional Off-road mode, designed specifically for low-traction conditions." on page 5.

However the only mention in the option list is on page 26 where it is bundled in the very expensive "Performance Package".

So facelifted cars seem to have lost this feature - like several others that were included in pre-facelift cars. Skoda UK may argue that these changes are as a result of the ongoing chip shortage, but it only confirms my belief that the new MY23 cars do not provide features I enjoy in my MY21 car :(

DRIVE MODE SELECT
Featuring Normal, Sport and Eco mode,
plus Individual mode to truly meet all your
needs. All-wheel drive versions also offer an
optional Off-road mode
, designed specifically
for low-traction conditions.
so it looks like it has been built in to the drive mode select button ( thou why leave the off-road button in)

I believe you get the optional Off-Road mode ONLY if you opted for DCC. Dynamic Chasis Control.
See this option description for example:

I don't know if Sportline trim has the DCC as standard even with the top 190 HP version
I added it to my lower trim Karoq for 900 EUR (~800 pounds)
I have all the driving modes: Eco, Comfort, Normal, Sport, Individual and Snow
I also have the Off-Road Button
