I took some photos today of both of my Sakura boot liners in my wife's Karoq. Please see attached.

The one which is a true "liner" fits pretty well. There are various velcro tapes and elastic straps which you can use to attach it to the headrests of the rear seat and the sides of the boot. Our Karoq has a full-size spare wheel, so if you only have a skinny spare wheel the floor of your boot cavity will be a bit lower than mine. Please note also that I only spent a couple of minutes fitting this. If you're prepared to spend a bit more time, I'm sure you could get it to fit a bit more tidily than I did. But whether it's good enough to be left permanently (eg. if you have a dog) is up to you to determine. I only bought it for occasional use, not as a permanent fixture.

The one which is just a piece of rubber (which is cut to the shape of my BMW 2-Series Gran Tourer boot, not the Karoq boot) is just long enough to extend back as far as the rear seats.

I didn’t try it with the seats down, and I have packed it away again now. But you can see in my photo of it with the seats up that it goes nearly up to the top of the seat backs.
If you needed to use it with the seats down and want to prioritize protecting the boot floor rather than the sides, you could always shuffle it forwards, because there is a large fold-out flap which is designed to cover the bumper when the boot is open, which you could use instead to cover part of the internal boot floor.

I've got a 1.5 SE Drive on order which does not have varioflex seats but does have the adjustable boot floor. Does anyone on here have the same arrangement in their Karoq, and also have a full (i.e. with sides not just the floor) bootliner? I'm stuggling to find one (Hatchbag say they don't do one for the adjustable floor). I have a dog so I'm keen to get some protection for the boot! Thanks.

I was going to buy one of the recommended boot liners. When I had the Sorento, I bought a boot liner from Lidls for about six quid, which was advertised as suitable for SUV's and hatchbacks. It was totally useless for the Sorento being not wide enough and not long enough. I was going to give it away, but ended up stashing it in my garage. While making a futile effort to tidy up, I came across it the other day and tried it in the Karoq and "bingo"! it fits perfectly, protecting the sides and attaching well with the velcro, the back of the back seats and not quite stretching over the loading area, but near enough. The reason I bore you with this post is that I was in a large Lidl yesterday and there they were. If you're quick enough and your local Lidl has them, grab one if you haven't got a liner. They had them in green, which looks better than the black one I've got and well worth six quid.

correction on the previous post - I went into the particular Lidl where I saw these, what I assumed to be boot liners and had a look to see if they were still there.
They still had plenty, but they are not the same boot liners as I thought they were. They are in fact a big green bag which is square so that it sits in the boot with the open part facing outwards and a useful large flap which protects the rear of the car when loading etc. They are designed for taking garden waste to the tip and I don't think your dogs would be happy if you tried putting them into it. They also cost nine quid. I debated whether to get one and decided it would just be another item to store in my already cluttered garage, so I gave it a miss.
