Sport mode (at least with a DSG box) delays gear changes so you are using higher revs, and in my Golf at least also keeps me in 6th gear rather than changing up to 7th. So yes, it is likely to use more fuel to give you higher acceleration. I have my Golf in Eco mode, but pull the DSG gear selector back into Sport mode when I need to overtake someone quickly.

It will also alter the Adaptive Cruise Control and again on my Golf, will alter the Dynamic Light settings. If you also have Dynamic Chassis Control, it will tighten up the suspension.

If you look at the Individual mode settings, that will show you which ones can be set to the Sport setting rather than Normal or Eco, and so which ones the Sport mode will be setting to Sport,
