No, I only had the fault appear after driving my new car for several months. I think it's triggered by some combination of factors, and is fairly random for the 0270 software variant. Since being updated to 0276 last November I've been fault-free.

Correct. On my old Golf there were 2 SD card slots at the top of the glovebox. One held the map data and the other was free for music SD cards. On MIB3 cars you can play music via the USB-C ports instead.

The main car software update has to be done by a Skoda registered workshop as the car needs to download a lot of date from the main Skoda servers. (I believe it takes several hours.) The SOS error problem is a known software fault which your dealer should be able to cure. In my case, the MY21 car's software was updated from v0270 to v0276, and the problem hasn't reoccurred since. Normally the car uses its pre-paid e-SIM connection even when you've paired your phone to the car, but you can change this by going to Menu / Settings / Data connection / . You can get details of the Skoda Connect system at https://www.skoda.co.uk/owners/skoda-connect If you have a valid licence, then your car should download updates the the map database automatically when it finds an update.
