If you do feel you need GAP insurance, you will find it much cheaper online.

Although they may claim to do afour wheel alignment, generally vey little is adjustable apart from the front wheel toe-in or toe-out.

I've just checked mine (2021 Edition). The 2 outer seats do not clear the wheel arch so can't go right back. The seats only have 2 positions and at max recline they are limited by the wheel arches and the boot cover. The centre seat only reclinse as much as the outer two, so will not recline further...

I believe it is possible to go to 235 width with the existing wheels and a 45 prifile would only increase diameter by 1.35, so that would be ok. Other than that you options would probably be to decrease wheel size.

I've just had my car in for service, and I asked them to look at the SOS system which gave fault warnings on 5 or 6 occasions. They did warn me about the charge. Investigation did show one logged fault, but on that day no warning. There was some kind of explanation about the embedded e-sim throwing ...

If you use a tyre calculator the rolling diameter of the 55 tyre is 6.57% greater than the 45 tyre. This means fewer revolutions of the wheel per mile and will make your speedo under-read, which is illegal, and also your odometer. That is appalling! All three of my Karoqs were very quiet. Which obviously confirms that the older ones were fine. So they must have done something (left sound deadening out??) I can comment on Mich Primacy 3 compared with Bridgestone Duellers. My HRV HEV had the Michelins and were quiet and grippy...

Getting the dashboard to show the gear should be easy. With ignition on press the bottom right button on the right hand side of the steering wheel. This will scroll through the 5 options. USB-C beside rear view mirror is ignition switched, so not permanently on. All usb-c are switched. I don't have the socket on the mirror, so I power my dashcam from one of the other usb-c sockets.
